Rotary Type Automatic Koji Making Equipment

The most important thing in sake production is the koji-making process – whether the resulting koji is good or bad is the deciding factor for quality.Fujiwara Techno-Art has developed a wide diversity of koji-making equipment to serve as core technologies in fermentation. The centerpiece is our rotary automatic koji-making equipment, which brings together the cream of our technologies to achieve total automation of the entire koji-making process from spreading through to discharge.Able to handle processing capacities from small to large, this equipment achieves top-quality koji production through optimum temperature and humidity management using vector control in which the experience and skills of master brewers are rendered into programs.We have also completed an aseptic solid state cultivation equipment and developed it for practical use.

This equipment can carry out all the processes of koji-making – including spreading, turning and discharge – automatically in unmanned operation.Its important parts are made from stainless steel for high durability and cleanness.Its structure allows easy cleaning, washing and sterilization, right down to the intricate parts. If desired, it can be fitted with an automatic washing apparatus.

VEX Type Non-airflow Ginjo Koji-Making Equipment

Koji for ginjo and daiginjo sake is required to be of high quality, and so traditionally it was made by spreading koji into a layer roughly 3 cm thick, using manual labor (“futa koji method”).The concepts of this futa koji method were skillfully utilized to develop the non-airflow ginjo koji making equipment. The koji layer’s thickness was changed to 6 cm, enabling the moisture vapor to be discharged nearly evenly over the layer’s top and bottom surfaces, and the product temperature to be controlled via the moisture vapor’s latent heat.

Powder or Seed Mold Supplying Device

Dispersal of seed mold is an indispensable element in koji-making.This powder or grain seed mold supplying equipment can feed even small amounts of seed mold at a constant rate.Formerly it was usual to disperse seed mold at the cooling equipment outlet area, but we have developed a method for connecting pneumatic conveyance equipment so that seed mold can be fed to areas away from the body of the machine.By employing an air cleaning and dehumidifying unit, the equipment achieves stable seed mold supply and a clean environment.
